Christmas catering

Would you like to plan having the Christmas Dinner at your own place, you can get some inspirations from below. There are both buffets and a 4-8 courses menu. 

We would recommend the buffets if it has to be in an easy way as the buffets would be ready to serve by delivery. If you wish to enjoy fine dining at home, we would recommend the 4-8 courses menu. 

 

Buffet 1 - per person kr. 325,-

  • 3 kinds of maki w/ soya, ginger & wasabi 
  • Fusion's chicken salad w/ fresh herbs
  • Smoked salmon w/ smoked cheese, sesame & bitter salads
  • Slow cooked Angus cuvette w/ baked root veggies & miso sauce
  • Guinea fowl w/ mushrooms & pickled lingonberries
  • Roasted small potatoes w/ thyme
  • Homemade bread & butter
  • Chocolate rownie w/ white chocolate mousse & caramel
 

Buffet 2 - per person kr. 425,-

3 kinds of maki w/ soya, ginger & wasabi
Panfried dumplings w/ homemade chili mayo
Skagen ham w/ herbs cream & semi-dried tomatoes
Fusion's fish balls w/ sweet chili sauce
Veal fillet w/ cabbages, mushrooms & glace
Slow cooked Duroc pork w/ pumpkin & passionfruit
Small potatoes w/ parsley & garlic
  • Homemade bread & butter
Baked cake & berries w/ raspberry cream & meringue
 

Please note the following when ordering the buffets:

  • - Minimum 10 people
    Free delivery only within Aalborg
    - A fee of kr. 15,- per km for deliveries outside Aalborg

  1. Tuna & yellowtail terrine - avocado cream - soya roe - small herbs
  2. Cod - leek - larch - lemon
  3. Venison  potato  - herbs - pistacio - smoked sauce
  4. Yuzu - apples - sour cream
 
6 courses per person kr. 695,- (above 4 dishes + No. 5 and 6)
  1. Monkfish – bak choi – oyster sauce - curry oil
  2. Duroc pork - BBQ - pumpkin - passion fruit
 
8 courses per person kr. 885,- (above 6 dishes + No. 7 and 8)
  1. Carpaccio of wagyu – caviar -  dried foie gras - truffle
  2. Roasted lobstertail – mushrooms - abalonesauce

 

December menu

4 courses per person kr. 565,-

  1. Flambeed salmon - white soya - shiso - tomato - pickled kohlrabi
  2. Catfish - fermented asparagus - daikon - dill
  3. Wagyu - King oyster mushrooms - cabbage - cranberries
  4. Ris a la mande
 
6 courses per person kr. 695,- (above 4 dishes + No. 5 and 6)
  1. Monkfish – bak choi – oyster sauce - curry oil
  2. Carpaccio - truffle - caviar - foie gras
 
8 courses per person kr. 885,- (above 6 dishes + No. 7 and 8)
  1. Pigeon - beetroots - sorrels - fermented garlic
  2. Roasted lobstertail – variation of pumpkin - lobstersauce

Please note the following when ordering the 4-8 courses menu:

  • - Minimum 8 people
    - For replacement of any of the dishes, it will cost additional kr. 75,- per dish per person
    - It would be necessary to rent a Chefs to prepare the menu for you . Chef per hour kr. 475,-
